RECIPE: Clear Garden Berry Jelly
This is the easiest way to see the magic of agar. The jelly will be firm, clear, and will retain the true flavor of the berries.
Ingredients:
- 500 ml water or light juice (e.g. apple)
- 1 teaspoon agar powder
- 2-3 tablespoons maple syrup or other sweetener (to taste)
- A handful of fresh or frozen berries (blueberries, raspberries, strawberries)
Preparation:
- Stir the agar powder into the cold liquid and leave to swell for 5-10 minutes.
- Heat the liquid over medium heat, stirring occasionally.
- Once the liquid starts to boil, let it bubble for about 1-2 minutes. This is important for the agar to "activate".
- Remove from heat, stir in sweetener.
- Place the berries in a bowl and pour the hot liquid over them.
- Leave at room temperature. The jelly will start to set after 20-30 minutes!
