WATER KEFIR PREPARATION INSTRUCTIONS
RAW MATERIALS:
3 tbsp water kefir grains (kefir crystals)
1 liter of water (preferably filtered or demineralized, chlorine-free)
3 tbsp sugar (regular white sugar, brown or cane sugar)
+ Optional: lemon slice, raisins or dried fruit
+Glass jar (at least 1 liter)
+A cloth or paper towel and a rubber band, or a glass lid from a Weck bottle
WORK PROCESS:
Pour cold water into a cup, add sugar, stir well until the sugar is completely dissolved.
Once the sugar has dissolved, add the kefir grains. The grains should not come into contact with
metal – use a plastic or wooden spoon.
Fermentation:
Cover the jar with a breathable cloth or paper towel (secure with a rubber band) or place it over
with a special glass bottle lid. Leave at room temperature for up to 72 hours if room
temperature above 22 °C, then 24 hours is sufficient. The intensity of the flavor increases with longer
fermentation.
When the drink is ready, strain the drink through a plastic sieve and pour into a glass bottle.
Second fermentation (optional):
If you want a carbonated drink, add fruit or juice and leave in a tightly closed bottle for another
1–2 days. Then cool in the refrigerator.
Kefir grains are reusable – put them in fresh sugar water and repeat
process.
IMPORTANT!!!
+ If the kefir becomes too sour, ferment for a shorter time or use less sugar.
+ Store kefir grains in sugar water in the refrigerator if you don't want to use them right away
(max 1 - 2 weeks).
+ Do not use metal containers or spoons. Rinse the kefir grains with clean
water.
Fermented foods are one of those small daily steps that make a big difference to your well-being in the long run.
