Xylitol (E967) is birch sugar, or a natural form of sugar alcohol, which is also found in fruits, vegetables, and the bark of various trees. The human body (liver) also produces small amounts of xylitol.
Perhaps the most significant health benefits of using xylitol are directly related to oral health. It limits the growth of caries-causing microbes, reduces plaque and prevents its re-formation, strengthens tooth enamel and thus protects teeth and gums from caries, acids and other microbes, as well as improves breath aroma and reduces dryness in the oral cavity, promoting natural moisturizing of the mucous membrane. Regular use of xylitol in oral hygiene also limits the growth of other harmful, inflammatory bacteria, helps against periodontal disease and reduces tooth sensitivity.

Finely chopped wood is mixed with water, purified, filtered, and concentrated until xylitol or birch sugar is separated. This sugar does not have the usual, pronounced sweetness. It only moderately increases blood glucose levels, therefore it is safe for use even by people with diabetes. The glycemic index of birch sugar is only 7, compared to sugar - 65-100 (maximum)! Children under 3 years old are not recommended to use this sugar, but adults should include it in their diet slowly and gradually, because xylitol has a laxative effect.
