Cardamom is something that, once you get to know it, you will never give up and then wonder how you ever lived without it! The perfect spice for sweet dishes, gingerbread dough, mulled wine, and also goes fantastically with meat and fish.
Green cardamom seeds have a slightly sweet, lemony flavor with a slight hint of nutmeg.
Before use, it is recommended to lightly toast the seeds in a dry pan (do not burn them, just heat them over low heat!) and then grind them in a mortar. This will help the essential oils to release better and allow you to fully enjoy the unique aroma and mildly spicy taste of cardamom.
Cardamom has a pronounced cooling effect, so it helps with inflammation, toothache and earache, reduces thyroid activity in case of hyperfunction, improves blood supply to the blood vessel walls, has a beneficial effect on the female hormonal system, also promoting lactation, calms the mind and reduces stress, improves memory and mental function, and is also useful for eye inflammation.
Green cardamom gives a wonderful taste and aroma to cookies, marzipan, yeast dough products, and you can also add a pod to compotes, soups (especially pea soup), and sauces. It goes great with citrus fruits, but it gives a really wonderful flavor accent to tea or other hot drinks. Cardamom tastes good with rice pudding and various milk dishes (a glass of hot milk with cardamom is a great way to get rid of nightmares and sleep soundly until the morning!). Approximate amount to add: one ground pod per kilogram of dough or other food. For sweet dishes, jellies, and compotes, ½ or 1/3 of a ground pod per liter of liquid is enough. Whole pods are added 5 minutes before the end of cooking, ground cardamom - at the very end.
