You have to cook gradually, start boiling a small amount of sap, adding more from time to time, then a little more. You have to carefully monitor the temperature, because syrup has a higher boiling point than water. Professionals use special steamers for this purpose – it will be very difficult to reduce the sap to syrup in a simple saucepan without burning it. After boiling, the syrup must be filtered. In short, this is probably the time when it is worth buying ready-made maple syrup in the store.

Pumpkin Seed Caramel Recipe

250g sugar, 170g water, 110g maple syrup, 150g pumpkin seeds, a pinch of ground Ceylon cinnamon, 1/2 tsp sea salt, 40g butter.

Spread baking paper on a baking sheet, grease the paper with butter.

Pour the sugar into a saucepan, add the syrup and water and heat over medium heat, stirring constantly, until the sugar has melted. Then continue to heat for a few more minutes, until the caramel turns golden brown.

Add pumpkin seeds, cinnamon, and salt to the caramel and stir. Continue to heat until a drop of caramel poured into cold water becomes solid.

Then turn off the heat, add the butter, and stir it thoroughly into the caramel mixture. Pour the caramel onto a baking sheet, smooth it out, and let it cool.
