True, you don’t always need the classic red wine or white wine vinegar – there are recipes with lemon juice, as well as alcohol (white wine, sherry, cognac).
If you add vinegar to mustard, you can do it in different ways – the ground mustard is usually first mixed with water and allowed to stand until the water draws the strength out of the mustard, and only then is the vinegar added (after about 10–15 minutes). Adding the vinegar at the same time as the water will result in a milder result.
Make your own mustard - take a cup of mustard powder, mix it with warm water, until it forms a homogeneous, sour cream-like consistency without lumps. Put the resulting mass in the refrigerator until the next morning and then mix in honey or sugar, salt, vinegar and oil - everything to taste! If you want, you can also add chopped herbs, sun-dried tomatoes, stir in roasted whole mustard seeds, etc.
Country mustard. Beautiful color and honeyed flavor – these might appeal to those who are fond of the so-called English mustard. However, if you are used to the mild nature of store-bought mustards, I warn you that these are much more spicy.
Ingredients:
- 6 tablespoons mustard seeds
- 1/2 cup mustard powder (about 50 g)
- 1/2 cup water or beer
- 3 tablespoons white wine vinegar
- 2 teaspoons salt
- 1 teaspoon turmeric
- 2 tablespoons honey
- a pinch of finely chopped fresh herbs (optional)
Crush the mustard seeds in a pestle – roughly, not completely.
Place in a bowl, add salt, mustard powder, turmeric and honey, as well as herbs if desired.
Mix.
Add water or beer, mix thoroughly. Leave to infuse for 10 minutes (the longer you leave it, the milder the mustard will be).
Then add the vinegar, mix, pour into jars and store in the refrigerator. It is advisable to let the mustard sit for at least 12 hours before using.
Tip: When making mustard, always add water first, allow the ingredients to combine, and only then add vinegar.
