Rye flour can be used to make various treats and delicious meals – pancakes, pizza base, waffles, bread, you just need to get your household used to it. If the rye flour is very coarse, the pancake and any other dough will be loose, heterogeneous, so it will not hold together when baking. To prevent this from happening, add additional fine flour to the dough: at first it is recommended to use 1/3 rye and 2/3 fine wheat flour. Later, the proportions can be gradually increased in favor of rye flour, until in the end you can vary only with fine and coarse rye flour.
Pizza dough Prepare by rubbing 100 g of cold butter into two cups of rye flour, adding one egg and two tablespoons of sour cream. Add a pinch of salt and a little sugar, knead. Leave to rest for half an hour, roll out thinly and place the filling on top – cheese, tomatoes, sausage, olives, tuna, etc. Bake at +200 °C for about 15 minutes (the thinner the roll, the shorter the baking time).
Apples are delicious. pancakes . For the dough, take a glass of whole grain rye flour and the same amount of fine wheat flour, stir in half a teaspoon of soda, a pinch of salt and a couple of tablespoons of sugar. Then add three glasses of kefir, into which one egg has been mixed, and mix. Gradually add water until the consistency of thick cream is formed. Then add apples cut into pieces (you will need about 2-3 large, juicy apples) and bake in a greased pan until the pancakes are golden brown. Apples give the pancakes lightness and juiciness. Thin pancakes can be baked only from rye flour, but they should not be very coarsely ground. They are served, for example, with a sauce of mushrooms and cream, dried meat and onion, or salmon and garlic.
Rye waffles It can be made even easier. Add an egg, a glass of whey (you can replace it with water), and a tablespoon of olive oil to two cups of whole wheat flour. Knead the dough, let it rise for half an hour, and bake in a waffle iron.
