To extract the seeds from the pod, place the pod on a board, flatten it with your fingers, and smooth it out with a thin, sharp knife. Then carefully cut it lengthwise (without cutting it in half), open it, and use the blade to scoop out the seed mass. The empty pod can then be dried and ground with sugar, or simply placed in a sugar bowl to absorb the vanilla aroma.
Vanilla is usually used in milk, chocolate, pastries, coffee, tea, various sweets and desserts, alcoholic and non-alcoholic drinks, fruit salads, etc. For some, this may be a discovery – vanilla is also added to main dishes, such as turkey, rabbit and pork stews, vegetable curries, cheeses and various salads. • 4 vanilla pods
• 100 ml vodka
Cut the vanilla pods lengthwise. Depending on the bottle in which the extract is prepared, divide them into 2–3 parts and pour vodka over them. Let the extract infuse for at least four weeks, but preferably two months. The longer it stands, the more persistent and mature the flavor.
