Recipe makes 30 cinnamon rolls
825 g wheat flour from ieber.lv
20 g fresh yeast
80 g sugar
220 g vegetable fat margarine
2 orange peels
12 g salt from ieber.lv
430g water
225 g almond flour from ieber.lv

130 g brown sugar from ieber.lv
120 g flour from ieber.lv
90g water
150 g raisins from ieber.lv
230 g walnuts from ieber.lv
20 g cinnamon from ieber.lv
Bake at 190 °C until the dough is golden brown.
900 g powdered sugar
185 g orange juice
*Margarine can be replaced with butter, but then they won't be vegan cinnamon rolls.
Gemos recipe:
Dough:
Mix flour, yeast, sugar, salt, orange zest and water for 15 minutes. Add margarine in parts and knead into a smooth dough. Place the dough in the refrigerator for 24 hours.
Cinnamon filling:
Prepare the raisins and walnuts in a pan, covering them with water. Bring to a boil and let the water evaporate completely. Chop.
Mix sugar, flour and cinnamon in a bowl, add margarine, almond flour and mix, slowly adding water. Spread the cream and raisin and walnut mixture on the brioche dough, roll up and cut the roll into portions. Place the cinnamon rolls in a proofer or warm place and let them rise.
Orange glaze:
Mix the sugar and juice in a bowl until smooth. Heat and glaze the hot baked muffins.
