BIOLOGICAL VALUE The basis for everything is berry and fruit purees, dill, garlic - which in themselves are a whole core of biologically active substances, and transfer these natural values ​​accumulated in them also to ketchups and sauces. To a greater or lesser extent, this depends on the substances (vitamins) contained in each of the raw materials, because each vitamin has its own heat resistance, for example. Vitamin C decreases, but vitamin A or B, like minerals, concentrate in the product, because with proper processing, heat does not affect them, therefore the sauces are valuable with their natural composition and the substances that are preserved in it. In addition, all ketchups are produced with a small amount of salt, without vinegar, because the necessary acidity is provided by the natural acids of the berries, which also ensure the use of these sauces for marinades. Blackcurrant plum sauce, in turn, has a reduced amount of sugar, because the sweetness is basically given to them by the natural sugars of the berries.

COLOR: Cooking sauces and ketchups contain "natural dyes", which are biological pigments of berries - CAROTINOIDS (red, yellow and orange pigments) and ANTHOCYAN (blue, reddish, purple pigments, depending on the pH of the environment).
