HEMP SEED PESTO recipe

This is a great way to turn shelled hemp seeds into a creamy pesto that you can add to a variety of everyday dishes, making them more appetizing and nutritious. The main difference from regular pesto is that hemp seeds are used instead of pine nuts (thereby increasing the protein content).

Ingredients:
Fresh basil – 2 good bunches
Shelled hemp seeds – ¼ cup
Grated Parmesan-type cheese – ¼ cup
Olive oil – 2-3 tablespoons
Garlic – 1 clove
Lemon juice – 1 tablespoon
Salt – ¼ – ½ teaspoon

Preparation:
Place all ingredients in a bowl and blend with a blender until smooth and creamy. If you want a thinner pesto, add a little water. If you want a thicker pesto, add more olive oil. You can also replace some of the olive oil with hemp oil.
In the summer, when fresh basil is more available, you can make a larger batch of pesto and freeze it in smaller portions. This is a great way to preserve the taste of summer to enjoy in the middle of winter! It tastes good!
