Bakery pie recipe
This same dough also makes fantastic cinnamon rolls, caraway buns, rhubarb breads, and poppy seed buns.
Dough ingredients:
- 1 cup (250 ml) milk
- 1 cup (250 ml) kefir
- 1 cup (250 ml) water
- 1 teaspoon salt
- 9 tablespoons sugar
- 1 packet of yeast
- 2 kg wheat flour (can also be baked with 1 kg wheat and 1 kg barley flour)
- 1 – 1.5 cups oil
- 1 packet of vanilla sugar
- 2 eggs for brushing
- cumin for sprinkling
For the filling:
- diced dried meat
- fried onions (if you like)
- salt
- pepper
Preparation:
Pour milk + kefir + warm water into a large bowl. The liquid should be warm, not hot. Add salt + sugar + vanilla sugar, mix thoroughly. Add flour gradually, sifting through a sieve. When ⅓ of the total amount of flour has been added to the dough liquid, stir the mass with a wooden spoon and add the risen yeast. Continue adding flour, sifting it.
The dough becomes thick. Then it is time to gradually add 1 cup of oil to the dough. As you add the oil, the dough becomes pliable. From now on, continue to knead the dough with your hands. Grease your hands before putting them in the dough, so the dough will not stick to your hands. Continue adding flour, obtaining a homogeneous, elastic mass. When the dough starts to come away from your hands, it is ready. Form a “ball” of the finished dough in a bowl, cover the bowl with a towel and put it in a warm place to rise.
When the dough has doubled in size, divide the dough into portions. The pies are formed on a wooden board, which has been oiled (the flour is replaced with oil, the flour hardens the finished dough), and the pies are made. Each baker chooses their favorite flavors and bakes pies with meat, cheese, cabbage, apple, cottage cheese and other fillings. It is important that the dough completely covers the filling and the pie does not open during baking. When the finished pies are lined up in a pan, they are covered with a beaten egg with a brush and decorated with caraway seeds or other seeds.
We bake the pies in a wood-fired bread oven, where they bake for 5 to 7 minutes. In an electric or gas oven, it is recommended to turn the heat to the maximum, then the pies will not dry out and will bake soft, fluffy.
